YUM! Pumpkin Bread Recipe

Pumpkin Bread

3 1/2 cups flour (plain)
1 cup oil
4 eggs
1 1/2 tsp salt
2 cups pumpkin
3 cups sugar
1 tsp nutmeg
1 tsp cinnamon
1 tsp ginger
2 tsp baking soda
1 cup pecans, chopped
2/3 cup water

Mix oil, sugar & eggs well.
Sift dry ingredients together, add to egg mixture.
Stir in pecans.  Pour mixture in 2 greased loaf pans.
Bake in a 350F oven for 1 hour & 15 minutes.

(I sometimes substitute black walnuts because we always harvested our own walnuts when I was growing up and I adore them!)

  2. Denise, this is a very good recipe. I can't make it too often because I can't stop eating it! :D

My current spinning project: The black is alpaca fiber that I bought a couple of years ago and I have just got around to spinning it. The colored strand is 100% silk that I bought at SAFF and spun into thread. I am not sure what I am going to make from it. I just finished spinning all of it tonight. I have to count and see how many yards that I have and then I will decide what I can possibly make.

    Have a Happy Thanksgiving!
