Pumpkin Bread
3 1/2 cups flour (plain)
1 cup oil
4 eggs
1 1/2 tsp salt
2 cups pumpkin
3 cups sugar
1 tsp nutmeg
1 tsp cinnamon
1 tsp ginger
2 tsp baking soda
1 cup pecans, chopped
2/3 cup water
Mix oil, sugar & eggs well.
Sift dry ingredients together, add to egg mixture.
Stir in pecans. Pour mixture in 2 greased loaf pans.
Bake in a 350F oven for 1 hour & 15 minutes.
(I sometimes substitute black walnuts because we always harvested our own walnuts when I was growing up and I adore them!)
I am definitely going to try this recipe....maybe this week for Thanksgiving!
ReplyDeleteI wanted to comment on the photo of your current spinning project. That is some beeeyooooteeeful fiber!!! Was is something you picked up at SAFF maybe? Do you already know what you will make with it? I love it!!

Denise, this is a very good recipe. I can't make it too often because I can't stop eating it! :D
ReplyDeleteMy current spinning project: The black is alpaca fiber that I bought a couple of years ago and I have just got around to spinning it. The colored strand is 100% silk that I bought at SAFF and spun into thread. I am not sure what I am going to make from it. I just finished spinning all of it tonight. I have to count and see how many yards that I have and then I will decide what I can possibly make.

I made the pumpkin bread. It was a hit!! My oldest daughter wants the recipe to make for Christmas gifts. ( we like to "gift" food.)
